Harvested from the hives right here at Masterson's! Choose from our lighter Spring Harvest or the dark and delicious Fall Harvest.

What's the difference? Well, it's all about the flowers! In the spring, bees forage on many, many different plants to collect nectar. The result is an amber, floral and smooth tasting honey. We typically harvest this in July. Our Fall Harvest is DARK. Many people say that it looks like molasses...but it definitely does not taste like it! While it's exactly as sweet as the lighter spring honey, it has a more "robust" flavor and we think it's pretty great. The nectar sources in this one are easier to identify, as there are not so many things in bloom during the late summer. The contributing flowers are primarily goldenrod, aster, and Japanese knotweed. The knotweed, which grows all along the banks of Cazenovia Creek behind the apiary, account for the rich, dark color of this honey.
